We’re hitting the road to discover the exciting science and innovations taking shape in Burlington, Vermont. This is your chance to peek behind the curtain of your favorite science program and be part of a special live recording.
On the menu: the future of food.
Food systems generate about a third of global greenhouse gases, making it critical to rethink how we feed people. Communities like Burlington are leading the way in building more sustainable and equitable food systems, and that includes innovating the foods of the future.
Two UVM researchers will tell us about their very different approaches to solving our foodie problems. PhD candidate and community organizer Alexis Yamashita is working to expand the types of crops that Vermonters have access to, starting with the mung bean—a delicious, but underrated, high-protein plant. And, professor Rachael Floreani is leveraging her expertise in biomedical engineering to work on cellular agriculture—aka, lab-grown meats.
And, did you know that in the United States, more than a third of the food supply never actually gets eaten? Sarra Talib, PhD candidate and sustainability coordinator at UVM’s Climate Kitchen; and Chef Jim McCarthy, owner of The Mill Market in Burlington, will join us to discuss what it’ll take to cut food waste and how they see the role of chefs in moving toward more sustainable food systems.
This 90-minute program includes an audience Q&A and the chance to ask Flora questions about SciFri. The event will be recorded, so you just might be part of a future SciFri radio show or podcast episode!
